Freezer Meals: Mel's English Muffin Recipe

Anything to make my life easier is always a WIN!  We eat breakfast everyday. Some mornings a hot breakfast is just not in the cards.  But a hot, grab and go breakfast should be and if the grab and go aspect does not involve a drive through window it is indeed a WIN!

What does it cost in dollars and cents?

I have never been a big fan of English muffins until a certain fast food chain came out with one that was indeed a delight, the price is pretty insane.  Theirs is about $3 on average and the one made at home is about $1.12 each.  That means with this recipe I get 12 sandwiches for what 4 would cost me out of the drive through.
**Again, defeating that it is too expensive to eat healthy vs. eating out of the drive thru theory.

What does it cost in food value?
1 English Muffin Sandwich from this recipe is
255 Calories    9.8 Fat    636 Sodium    26.75 Carbs   19 Protein

A drive thru favorite has:
290 Calories   12 Fat    740 Sodium   31 Carbs   17 Protein


What's In It?
For 12 you need
1 Dozen Eggs (Mel uses Organic Brown I used Cage Free Brown)
12 Whole Wheat English Muffins (I used the store brand)
12 slices of Sargento Ultra-Thin Cheddar
2 (5oz) packages of Canadian Bacon


What do you do?
Prepare your eggs.  My husband is the egg master of the family so he did this part.  We just used some spray in a skillet and made one egg at a time.  

He then handed it off to me and I assembled.  
"Layer Each Sandwich starting with bacon, egg, then cheese."

Mel said to put it in a freezer bag for storage, however, when I reheat mine they will go in the toaster oven after they have been thawed out in the fridge overnight.  So, I wrapped mine in foil.  Since they will not be in long term freezer storage then it will not make much of a difference.  IF you are going to microwave them, then I would go with Mel's instruction.  
But always freeze in a way that is ideal for how you plan on reheating it AND how long you plan on storing it.  Since freezer food is supposed to be "grab and go" or something designed to help you out, then make sure that you keep that in mind when picking out the type of freezer storage options.
